There is a very good book called Simply Gluten Free Desserts by Carol Kicinski. It hits all the notes you’d expect in a GF desserts recipe book, such as pie crust, cookies, cakes, and the likes. This blend makes the best cookies… amongst other things!
Also… go buy Carol’s book. So many good recipes.
4.5 cups / 640g white rice flour
1.5 cups / 180g sweet, also called glutinous, rice flour
2 cups / 304g potato starch (note: starch, not flour)
1 cup / 113g tapioca starch
4 teaspoons Xanthan gum
Add to large container, shake well, leave to settle, use to make cookies.
